Mushrooms starting to go bad? Try this easy mushroom dish and they will make it a few days more. I use this in soups, sauces, eggs, stuffing, on toast, or as a nice little side dish (serves 2). Note this freezes well for 3-4 months. You’re a mushroom lover and they go on sale, might be time to stock up!

1 tin        mushrooms

1              shallot

1T           avocado oil

1T           butter

1t            thyme Or 2 twig fresh

1/2t        salt

Dice mushrooms and shallots, mix together.

Heat a 10″ skillet on medium high heat. When the pan is hot add oil and butter.

When the butter has melted swirl around the pan to coat the bottom, lower the heat to medium low.

Pull pan off the heat, adding thyme stalks and swirl around for about 30 seconds. When you start to smell the thyme, return pan to heat and add mushrooms and shallots.

Sauté for 5-8 minutes, stirring occasionally. Do not cover with a lid.

When the mushrooms are a nice brown color, add salt and sauté for about 30 seconds more.

Taste and adjust seasoning.
